Lemon Coconut Almond Energy Bites

These are so easy & make the perfect little snack! These are inspired by my No Bake SuperFood Energy Bites! It is essentially the same base recipe with just a few substitutions. These are no-bake and grain, gluten, dairy and sugar free.

Key Ingredients:

Protein powder: I use vanilla Collagen or Bone Broth protein (Terra Origin or Ancient Nutrition brand are my favorite). These are high quality without any additives, synthetic ingredients etc. You may substitute for grass fed whey protein. Collagen/bone broth helps support healthy skin, hair, nails, digestive health & can help reduce inflammation.

Ground Flaxseed: High in ALA (healthy fat) fiber & a phytoestrogen, which helps the body’s natural balance of hormones.

Sliced almonds & almond butter: These are rich in healthy fats, zinc and magnesium, which help to support healthy thyroid functioning & overall energy.

Lemon: Naturally rich in Vitamin C, lemon has many anti-inflammatory and viral properties to boost immunity & adrenal health. I use lemon juice and either lemon zest or pure theraputic grade essential oil (Doterra brand).

RECIPE: (can double, triple etc)

  • 28g (1/4 cup) ground flaxseed
  • 28g (1/4 cup) coconut flour
  • 1/4 cup Erythritol granulated sweetener (can omit or change amount)
  • 2 full servings (60g) vanilla protein powder*
  • 64 (1/4 cup) unsweetened all natural almond butter
  • 1-2 tsp pure raw honey
  • 1 Tbsp unsweetened coconut flakes
  • 1 Tbsp finely crushed sliced or slivered almonds
  • Juice of 1 lemon
  • Zest of 1 lemon (finely diced) or 5 drops pure grade lemon essential oil

DIRECTIONS:

Mix all dry ingredients in a small bowl. Add the nut butter & water. Mix again well until it forms into a dough. Form into small bites. Store in the fridge or freezer. Makes approx. 25 (10g) bites

Nutrition Info for approx. 1 bite:  35 calories, 2g carbs (1g fiber) 2g fat, 2.5g protein
