Healthy Rice Krispie Treat Bars

Who else has a major dessert stomach?! πŸ™‹πŸΌβ€β™€οΈ

If you know me, you KNOW I love sweets. I don’t discriminate πŸ˜†

My favorite way to enjoy them without deprivation is creating healthier options!

These No Bake “Rice Krispie Treat” Bars are delicious!! They are gluten & dairy friendly, uses natural ingredients, could be vegan as well!

INGREDIENTS:

3 cups organic rice krispies cereal (nothing added)
50g collagen peptides powder
1/2 cup (125g) all natural nut butter (peanut or almond works well)
1 cup vegan marshmallows (Dandies brand)
3 Tbsp (60g) raw honey
1/2 cup granulated erythritol
1 tsp pure vanilla extract
Dash of sea salt
Topping:
4oz dark chocolate chips (or your choice) & 1/2 tbsp coconut oil
Optional sea salt

For Vegan Friendly: *omit collagen & use DF chocolate*

Directions:
In a large saucepan combine all wet ingredients. Mix together on low heat, stirring constantly to prevent burning or sticking. Once melted, turn down the heat to very low heat, and add in the marshmallows & cereal. Stir again constantly and mixing well. Turn off heat & let cool for a few minutes.
Line a 9×9 dish (or a larger dish) with parchment paper & transfer the batter with a spatula. Gently press down into dish so it’s an even layer.
Place in fridge or freezer while making the chocolate topping.
Heat up in microwave or on low heat stove top the chocolate and oil. I did 20 sec increments in the microwave, stirring well in between, to be careful not to burn, until melted.
Drizzle over the bars; leave as is or spread with a spatula to make an even top layer. Add optional sea salt.
Place back in fridge or freezer for at least 1 hour before cutting (I suggest a large butcher knives to help hold the bars in place). Keep in fridge/freezer until enjoying! 🀩

292g carbs (11g fiber 170g sugar) 113g Fat, 68g protein
