I like beets, but I used to never eat them. Beets used to be a food that I didn’t ever buy or make because I didn’t feel comfortable preparing them. How silly right? But it’s true, and I know that goes for a lot of people with certain foods.

They also don’t know an enjoyable way to eat them. Many don’t like beets because they think of the stuff from the can (blah!) But they can be so tasty!

Why Eat Beets?

  • They are rich in: Vitamin A, C, B6, beta-carotene, iron, fiber, potassium
    They are known to improve blood flow & circulation, making it beneficial for exercise endurance, improving stamina & recovery.
  • This increase in blood flow has also been shown to improve mental focus and cognitive function.
  • The fiber in beets supports optimal digestion and a healthy gut.
    The nutrients in beets are extremely helpful in liver health and detoxification pathways.
  • They support a healthy heart, by helping to reduce inflammation & regulate blood pressure!

Here’s the easiest way to enjoy beets: Roast them!

Steps:
1. Buy bunch of beets (any color)
2. Cut off ends, wash thoroughly ( I clean with DIY rinse and a vegetable scrub) and peel skin if desired
3. Cut them in half, then in slices, then in half again.
4. Lay out flat on baking sheet. Optional: Line with foil or parchment paper. Lightly spray with coconut/avocado oil spray OR drizzle lightly with avocado oil, then sprinkle with Himalayan sea salt.
5. Roast at 375F for 30ish min, flipping half way through.
Mine got soft yet slightly crispy on the edges & caramelized!! You can also roast them in the air fryer (approx.. 375 for about 10-12 minutes!)

Beets are delicious on salads or in stir frys! They’re also great with other roasted veggies, like sweet potato, butternut squash, brussel sprouts, carrots or onions!
