Carrot Cake Pancakes

Another “dessert” for breakfast…?
That’s okay by me!

Ingredients: (can be doubled/tripled, etc)

  • 1/3 cup dry oats
  • 1/3 cup nonfat cottage cheese
  • 1/3 cup egg whites
  • 2-3 tbsp carrot puree (I use a baby food jar of carrots!)
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract

Optional: shredded carrots, raisins, chopped nuts, etc.

Combine all wet ingredients in your blender or magic bullet. After all mixed, add in dry oats and blend again until smooth. Optional: Add a splash of milk if the batter is too thick. Stir in optional ingredients (raisins, etc). Cook on the stove like normal pancakes until bubbly…flip and then serve!

I love this with extra cinnamon, whipped cream, and maybe some sugar free syrup!
