These are perfect for those following a Ketogenic or low carb lifestyle. These are called “Fat Bombs” because of their high dietary fat content with virtually no carb/protein!

But don’t fear the Fat! Eating quality nutrient-dense dietary fats are a crucial part of a healthy diet. Coconut oil used in this recipe has been shown to improve blood sugar levels, boost brain function and boost metabolism. Bring it on!

Ingredients:

  • 60g (approximately 1/4 cup) coconut oil
  • 60g coconut butter/nut butter (I used half coconut & half almond)
  • 10g (2 Tbsp) special dark unsweetened cocoa powder
  • 1/2 tsp organic stevia extract powder
  • 1/2 tsp peppermint extract
    Optional: crushed peppermint candy or chips or cacao nibs

Directions:

Combine oil and butter in small Pyrex or glass dish. Microwave for 10-15 sec. if needed to softener & mix well together. Add cocoa powder, sweetener & extract. Pour into silicone cups (or smaller trays, or even sprayed mini muffin tins). If you don’t have any of the above, you could try parchment paper in a glass dish.
Pour into cups and freeze. Sprinkle optional candy. Once frozen, can keep in the fridge.

Notes:

Mine made 5 individual cups.

For just a rich chocolate flavor, you could also completely omit the peppermint and add vanilla extract.
